Ginger ale doesn’t need to come from a bottle with a label and a questionable amount of “natural flavor.” You can make it with real ginger, lemon, a little sweetness, and sparkling water.
This one starts as a ginger syrup, so you can keep it mellow or make it spicy enough to remind your sinuses they still work.

Ingredients:
For the ginger syrup:
- 1 cup fresh ginger, sliced
- 2 cups water
- 1/4 cup maple syrup, honey, or sugar
- Juice of 2 small lemons
To serve:
- Sparkling water
- Ice
- Extra lemon slices, optional
Method:
- Add the sliced ginger and water to a small pot.
- Bring it to a gentle simmer, then let it simmer for about 25 to 30 minutes.
- Strain out the ginger and let the liquid cool.
- Stir in the lemon juice and maple syrup, honey, or sugar.
- To serve, fill a glass with ice, add about 1/4 cup of the ginger syrup, then top with sparkling water.
- Taste and adjust. Add more syrup if you want a stronger flavor, or more sparkling water if you want it lighter.
Storage:
Keep the ginger syrup in a covered jar or bottle in the refrigerator for up to 1 week.
Note:
This is basically ginger syrup meeting fizzy water and pretending it’s fancy. If you want it spicier, simmer the ginger longer or use more ginger. If you want it sweeter, add more sweetener. Ginger ale is not here to judge your sugar choices.
