Let’s settle an important question: How melty do you want your mozzarella stick?
The picture says it all. From completely intact cheese to a full-on cheese avalanche, there are plenty of opinions about what makes the perfect mozzarella stick.
For me, there’s only one acceptable answer: crispy, golden, crunchy on the outside and ridiculously gooey on the inside. π
And yesβI’m talking about the kind where you pull one apart and the mozzarella stretches halfway across the table!
π§ What Makes a Great Mozzarella Stick?
A really good mozzarella stick is all about contrast.
You want a crunchy, well-seasoned exterior surrounding warm, soft, stretchy mozzarella. The breading shouldn’t be soggy or greasy, and the cheese shouldn’t disappear completely into a puddle on the plate.
The trick is getting the outside crisp before the cheese has enough time to completely escape.

π₯ The Secret to Getting That Perfect Melt
If you’ve ever made mozzarella sticks at home, you probably know the biggest problem:
The breading gets beautifully golden… and then all your cheese ends up in the oil.
Nobody wants that.
Fortunately, there are a few tricks that make a huge difference.
1. Use Low-Moisture Mozzarella
String cheese or a firm, low-moisture mozzarella works particularly well.
Fresh mozzarella contains considerably more moisture and isn’t the easiest choice for this type of fried snack.
2. Don’t Skip the Double Breading
A single layer of breading can leave little weak spots where melted cheese can escape.
For a sturdier crust, coat the cheese with flour, egg and breadcrumbs, then repeat the egg-and-breadcrumb step.

3. Freeze Before Cooking
This is one of the biggest secrets.
Once breaded, freeze the mozzarella sticks until they’re thoroughly firm.
The colder cheese takes longer to melt, giving the exterior time to become golden and crisp.

4. Get Your Oil Temperature Right
If you’re frying, aim for about 350Β°F (175Β°C).

And don’t overcrowd the pan. Adding too many frozen sticks at once can cause the oil temperature to drop.
5. Don’t Walk Away!
Mozzarella sticks cook surprisingly quickly.
Depending on their size and cooking method, they may only need a minute or two in hot oil. Keep an eye on them and remove them once they’re golden and crisp.

Ingredients
- 12 mozzarella string cheese sticks
- 1 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water or milk
- 1Β½ cups Italian-seasoned breadcrumbs
- Β½ cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Β½ teaspoon paprika
- ΒΌ teaspoon salt
- Black pepper, to taste
- Neutral oil, for frying
- Warm marinara sauce, for serving
Directions
- Prepare the cheese: Unwrap the mozzarella sticks and keep them cold while preparing the breading station.
- Set up three bowls: Put flour in the first, beaten eggs mixed with water or milk in the second, and breadcrumbs mixed with garlic powder, Italian seasoning, paprika, salt and pepper in the third.
- First coating: Roll each mozzarella stick in flour, shaking off the excess.
- Dip into the egg mixture.
- Roll thoroughly in the seasoned breadcrumbs, pressing gently so the crumbs adhere.
- Double coat: Dip the breaded stick into the egg again and then into the breadcrumbs for a second coating.
- Place the coated mozzarella sticks on a parchment-lined tray.
- Freeze: Freeze until firmβat least 30β45 minutes, preferably longer if you have time.
- Heat the oil: Bring neutral frying oil to approximately 350Β°F.
- Fry a few sticks at a time until the coating is crisp and golden. They cook quickly, so watch them carefully.
- Transfer to a wire rack or paper towel-lined plate to drain briefly.
- Serve immediately with warm marinara.
