Ingredients:
1 medium fresh pineapple, peeled, cored, and diced into 1/4 to 1/2 inch chunks
1 1/2 cups granulated sugar
3/4 cup apple cider vinegar
1 1/2 teaspoons red pepper flakes (adjust to taste)
1/2 teaspoon ground ginger
Fresh mint leaves, chopped (optional)

Instructions:
Peel, core, and dice the pineapple into small, even chunks for consistent cooking.
In a heavy-bottomed saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger.
Place over medium heat and stir until the mixture comes to a gentle boil and the sugar fully dissolves.
Add the diced pineapple and stir gently to coat in the syrup.
Reduce heat to low and simmer for 10 minutes, stirring occasionally, until pineapple turns slightly translucent.
Remove from heat and let cool for about 30 minutes as the syrup thickens.
Stir in chopped mint if using.
Transfer to clean jars, seal tightly, and refrigerate.
Let sit for at least 24 hours before serving for the best flavor.
