Basic Bread Dough

Ingredients

  • 3 cups (375 g) bread flour
  • 1 cup (240 ml) warm water
  • 2¼ tsp (7 g) instant yeast

Method

Method

  4. Knead for 8–10 minutes.
  5. Cover and let rise until doubled.
  6. Divide into equal portions.
  7. Roll each portion into an oval shape.
  8. Cook on a hot skillet until puffed and browned.
  9. Brush with butter before serving.

Pie Dough

Ingredients

  • 2½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 cup (225 g) cold butter, cubed
  • 6–8 tbsp ice water

Method

  1. Mix flour and salt.
  2. Cut in the cold butter until crumbly.
  3. Add ice water gradually until the dough comes together.
  4. Form into a disk and wrap.
  5. Chill for at least 1 hour.
  6. Roll out on a lightly floured surface.
  7. Fit into a pie dish.
