  • 1 lb boneless, skinless chicken, cubed
  • 1 medium red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups fresh pineapple chunks
  • Salt & pepper, to taste

How to Make It

  1. Marinate Chicken – Whisk together BBQ sauce, soy sauce, honey, olive oil, garlic, and ginger. Coat chicken and refrigerate for at least 30 minutes.
  2. Prep Foil Packets – Preheat grill to 375°F or oven to 400°F. Divide marinated chicken, bell peppers, onions, and pineapple into four foil sheets. Season with salt and pepper.
  3. Seal & Cook – Fold packets tightly, leaving space for steam. Grill for 15–20 minutes, flipping halfway, or bake for 20–25 minutes until chicken is fully cooked.
  4. Serve – Carefully open packets, garnish with cilantro or green onions, and enjoy with steamed rice or crusty bread.

Tips & Variations

 Use fresh pineapple for the best flavor.  Spice it up with red pepper flakes or sriracha.  Try shrimp or salmon instead of chicken.  Add zucchini or carrots for extra veggies.
