๐ HOMEMADE MANDARIN JAM

Ingredients
- 1 kg (2.2 lb) mandarins, with peel and seeds removed
- 700 g (3 1/2 cups) sugar
- Juice of 1/2 lemon
Instructions
Prepare the Mandarins
Wash the mandarins thoroughly.
Peel the fruit and cut the peels into thin strips (julienne).
Separate the segments, cut them into smaller pieces, and carefully remove all the seeds.
Macerate the Fruit
Place the mandarin pieces, the sliced peels, and the sugar in a large pot.
Mix well, cover, and let the mixture rest overnight so the fruit can release its natural juices.
Cook the Jam
The next day, stir the mixture again and place the pot over high heat.
Add the lemon juice.
Once the mixture comes to a boil, reduce the heat to low and cook slowly, stirring occasionally to prevent it from sticking to the bottom of the pot.
Check for Doneness
As the liquid reduces and the jam begins to thicken, test it by placing a small spoonful on a cold plate.
Run your finger through the center of the jam. If the line remains separated and does not immediately flow back together, the jam is ready.
Be careful not to overcook it, as it will continue to thicken slightly as it cools.
Jar the Jam
While the jam is still hot, pour it into clean, sterilized jars.
Seal the jars tightly and turn them upside down for a few minutes.
