- ½ cup whole milk
- ¼ teaspoon freshly grated nutmeg (optional)
- ¼ cup grated Parmesan cheese, plus more for serving
- 1 tablespoon chopped fresh parsley (optional)
For Serving
- 12 ounces (340 g) tagliatelle, fettuccine, or pappardelle
- Extra Parmesan cheese

Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve about ½ cup of the pasta water, then drain.
Step 2: Sauté the Vegetables
Heat the olive oil and butter in a large skillet over medium heat.
Add the onion, carrot, and celery. Cook for about 5 minutes, stirring occasionally, until softened.
Stir in the garlic and cook for another 30 seconds.

Taste and adjust the seasoning with additional salt and pepper if needed.
If the sauce becomes too thick, stir in a splash of the reserved pasta water.
Step 7: Serve
Toss the cooked pasta with the sauce until well coated.
