Lasagna Roll-Ups with Beef, Ricotta & Plenty of Cheese

These cheesy lasagna roll-ups are packed with seasoned ground beef, creamy ricotta, and lots of melted mozzarella. They’re a comforting family dinner that’s as impressive as it is delicious!

Ingredients

For the Lasagna Roll-Ups

  • 12 lasagna noodles
  • 500 g (1.1 lb) ground beef
  • 2 tablespoons olive oil
  • ½ onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups pasta sauce (tomato sauce)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste

For the Ricotta Filling

  • 400 g (14 oz) ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

For the Topping

  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the lasagna noodles. Bring a large pot of salted water to a boil and cook the lasagna noodles until al dente according to the package directions. Drain and lay them flat on a clean surface or lightly oiled baking sheet to prevent sticking.
  2. Prepare the beef filling. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent. Stir in the garlic and cook for about 1 minute. Add the ground beef and cook until browned, breaking it apart with a spoon. Stir in 1 cup of the pasta sauce, the oregano, basil, salt, and pepper. Simmer for about 10 minutes, then remove from the heat and let cool slightly.
  3. Make the ricotta mixture. In a large bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella, the Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until smooth and creamy.
  4. Assemble the roll-ups. Spread a layer of the ricotta mixture over each lasagna noodle. Top with a spoonful of the seasoned beef mixture, then carefully roll up each noodle.
  5. Arrange in the baking dish. Spread a layer of the remaining pasta sauce over the bottom of a 9×13-inch baking dish. Place the lasagna roll-ups seam-side down in the dish. Spoon the remaining sauce over the top.
  6. Add the cheese. Sprinkle the roll-ups evenly with the remaining 2 cups of mozzarella cheese and the ¼ cup of Parmesan cheese.
  7. Bake. Preheat the oven to 190°C (375°F). Bake for 25 to 30 minutes, or until the cheese is fully melted, bubbly, and lightly golden.
  8. Serve. Let the lasagna roll-ups rest for 10 minutes before serving. Garnish with freshly chopped parsley.

  • Prepare the roll-ups up to a day in advance, refrigerate them, and bake just before serving.
