If you’ve been cutting the leaves off your cauliflower and tossing them into the compost, you’re throwing away something delicious.
Cauliflower leaves are completely edible, and when roasted with a little olive oil and seasoning, the edges become wonderfully crispy while the thicker parts stay tender. They can be enjoyed much like roasted greens or kale chips.

🥦 Ingredients
- Leaves from 1 large head of cauliflower
- 1½ tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon onion powder
- 1–2 teaspoons grated Parmesan, optional
- Pinch of red pepper flakes, optional
- Fresh lemon juice, for serving
👩🍳 Instructions
1. Preheat the oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper if desired.
2. Prepare the cauliflower leaves
Separate the leaves from the cauliflower head.
Wash them thoroughly under cool running water and pat them very dry. Removing excess water helps them roast instead of steam.
Trim away any very tough portions of the stem, but don’t throw away the tender stems.
Cut large leaves into smaller pieces.
3. Season
Place the leaves in a large bowl.
Add the olive oil, salt, black pepper, garlic powder, smoked paprika, and onion powder.
Toss until the leaves are evenly coated.
4. Spread them out
Arrange the leaves in a single layer on the baking sheet.
Try not to pile them on top of one another. Crowding the pan can prevent them from becoming crispy.
5. Roast
Roast for approximately 12–18 minutes, turning once halfway through.
Keep an eye on them toward the end because the thinner edges can brown quickly.
They’re ready when the leaves are tender and the edges are deeply golden and crispy.
6. Finish and serve
Remove from the oven and let them cool for a couple of minutes.
For extra flavor, sprinkle with Parmesan and finish with a small squeeze of fresh lemon juice.
Serve immediately.
🧄 Easy Garlic-Parmesan Version
Want something extra flavorful?
Use:
- 1½ tablespoons olive oil
- 2 cloves finely minced garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons grated Parmesan
Toss everything together before roasting.
The garlic becomes fragrant while the Parmesan adds a savory, salty finish.

For a little heat, add:
- Red pepper flakes
- Cayenne pepper
- Chili powder
- A drizzle of hot sauce after roasting

💡 Don’t Forget the Stems!
The thicker central portions of cauliflower leaves don’t always get as crispy as the thin edges, but they’re still useful.
Slice the tender parts thinly and cook them along with the leaves.
If a section is particularly tough or woody, simply trim that part away.
