This Sweet & Spicy Pineapple Candy Is Seriously Addictive

Ingredients:
1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
1 1/2 cups granulated sugar
3/4 cup apple cider vinegar
1 1/2 teaspoons red pepper flakes
1/2 teaspoon ground ginger
Fresh mint leaves, chopped (optional)

Instructions:

Peel, core, and dice the pineapple into small, even chunks about 1/4 to 1/2 inch in size.
In a saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger.
Heat over medium, stirring until the sugar fully dissolves and the mixture begins to boil.
Add the pineapple and stir gently to coat in the syrup.
Reduce heat to low and simmer for about 10 minutes, stirring occasionally, until the pineapple turns slightly translucent.
Remove from heat and let cool for about 30 minutes as the syrup thickens.
Stir in chopped mint if using.
Transfer to clean jars, seal, and refrigerate.
Let sit for at least 24 hours before serving for best flavor.
