A soft, spiced apple loaf layered with a sweet cinnamon streusel topping. Perfect for breakfast, snacking, or as a cozy dessert.
Ingredients
Streusel topping
¼ cup granulated sugar
½ cup all-purpose flour
¼ cup brown sugar, packed
1 tsp ground cinnamon
¼ cup unsalted butter, cold and cut into small pieces
Loaf
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
½ cup sour cream or Greek yogurt
1 ½ cups diced apples (about 2 medium, peeled)
Directions
Prepare pan
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Make streusel
In a small bowl, combine flour, granulated sugar, brown sugar, and cinnamon. Cut in cold butter with a fork or pastry cutter until mixture looks like coarse crumbs. Set aside.
Mix dry ingredients
In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix wet ingredients
In a large bowl, beat softened butter with both sugars until light and fluffy (2–3 minutes). Add eggs one at a time, mixing well. Stir in vanilla.
Combine
Add dry ingredients gradually, alternating with sour cream or Greek yogurt, starting and ending with the dry mixture. Mix until just combined. Fold in diced apples.
Assemble loaf
Spread half the batter into the loaf pan. Sprinkle with half the streusel. Add the remaining batter on top, then finish with the rest of the streusel.
Bake
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan 10 minutes, then transfer to a wire rack.
