Ingredients

  • 1 kg (2.2 lb) beef shank, cut into pieces with the bone
  • ½ onion
  • 2 garlic cloves
  • Salt, to taste
  • 2 bay leaves (optional)
  • Warm corn tortillas
  • Chopped fresh cilantro
  • Chopped onion
  • Green salsa, red salsa, or chile de árbol salsa
  • Lime wedges, for serving

Instructions

1. Cook the Beef Shank

Place the beef shank pieces in a large pot and cover with enough water. Add the onion, garlic, salt to taste, and the bay leaves if using.

Bring to a boil, then reduce the heat to medium-low and simmer for 1½ to 2 hours, or until the meat is very tender and easily falls away from the bone.

Pressure Cooker Method: Cook for approximately 45 minutes under pressure.

2. Prepare the Meat

Once the beef is fully cooked, remove it from the broth. You can serve the meat in whole pieces or shred it with two forks for easier taco assembly.
