Black Olive Spread 🫒❤️
This delicious homemade black olive spread is perfect for breakfast, brunch, or as a spread for bread and toast. It’s savory, aromatic, and very easy to prepare.
Ingredients
- 500 g (about 1.1 lb) black olives, pitted
- 1 tablespoon garlic powder
- 1 tablespoon ground coriander seeds
- 1 tablespoon dried thyme
- 1 cup (240 ml) extra-virgin olive oil
- 50–75 g walnuts, optional
- 50–75 g red cheese, such as Edam or Gouda, optional
Instructions
- Prepare the olives:
Remove the pits from the black olives if they are not already pitted. Rinse them thoroughly. - Reduce the saltiness:
Place the olives in a bowl and cover them with water. Let them soak for 3–4 hours, changing the water once or twice if they are particularly salty. - Drain and dry:
Drain the olives very well and pat them dry with a clean kitchen towel or paper towels. It’s important to remove as much excess water as possible. - Blend the ingredients:
Put the olives in a food processor. Add the garlic powder, ground coriander seeds, dried thyme, and olive oil. - Add the optional ingredients:
If desired, add the walnuts for a slightly nutty flavor and texture, or add some grated or chopped red cheese for a richer, creamier spread. - Process until smooth:
Blend everything until you have a smooth, thick, and homogeneous paste. Scrape down the sides of the food processor as needed. If the mixture is too thick, add a little more olive oil, one tablespoon at a time. - Taste and adjust:
Taste the spread and adjust the seasoning if necessary. You usually won’t need extra salt because the olives and cheese can already be salty. - Serve:
Transfer the olive spread to a clean serving bowl and drizzle a little olive oil over the top. Serve with fresh bread, toast, crackers, or as part of a breakfast or brunch spread.
Storage
Store the olive spread in a clean, airtight container in the refrigerator. Keep the surface covered with a thin layer of olive oil to help protect it from air.
