Carrot Cake Loaf
Ingredients
• 2 cups all-purpose flour
• 1 cup granulated sugar
• ½ cup brown sugar
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• 2 eggs
• ½ cup oil (vegetable or canola)
• 1 tsp vanilla extract
• 2 cups grated carrots
• ½ cup chopped pecans
Instructions
- Preheat oven
Preheat to 350°F (175°C). Grease or line a loaf pan.
- Mix dry ingredients
In a bowl, whisk together flour, sugars, baking soda, salt, and cinnamon.
- Mix wet ingredients
In another bowl, whisk eggs, oil, and vanilla.
- Combine
Add wet ingredients into dry ingredients. Mix until just combined.
- Fold in
Stir in grated carrots and pecans.
- Bake
Pour into loaf pan and bake for 50–60 minutes, or until a toothpick comes out clean.
- Cool
Let cool completely before frosting.
Cream Cheese Frosting
Ingredients
• 8 oz cream cheese, softened
• ¼ cup butter, softened
• 1 cup powdered sugar
• 1 tsp vanilla
Instructions
- Beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla.
- Beat until creamy and fluffy.
- Spread over cooled loaf.

• Use finely grated carrots for softer texture
