CREAMY RASPBERRY CHARLOTTE

THIS IS HOW I MAKE CREAMY RASPBERRY CHARLOTTE

Easy, homemade, and no baking required.

Ingredients

For the creamy mixture:

  • 1 cup raspberries
  • 1/2 cup milk
  • 300 g cream cheese
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract

For the layers:

  • 250 g round Maria biscuits or butter cookies

For the raspberry jam:

  • 1 cup raspberries
  • 3 tablespoons sugar
  • Juice of 1/2 lemon

For decoration:

  • Fresh raspberries
  • Raspberry jam

Instructions

1. Prepare the Raspberry Jam

Place the raspberries, sugar, and lemon juice in a saucepan.

Cook over medium-low heat, stirring constantly, until the raspberries release their juices and a slightly thick jam forms.

You can mash some of the raspberries with a spoon to make the jam juicier, while leaving a few chunks for a homemade texture.

Remove from the heat and allow it to cool completely before using.

2. Prepare the Raspberry Cream

Place the raspberries, milk, cream cheese, sweetened condensed milk, and vanilla extract into a blender.

Blend until smooth, creamy, thick, and naturally pink.

For a stronger raspberry flavor, add a few extra raspberries. If you’d like it sweeter, add a little more condensed milk.

3. Assemble the Charlotte

In a baking dish or mold, arrange a layer of round cookies on the bottom.

Spread a layer of raspberry cream over the cookies using a spatula.

Then add a small amount of raspberry jam on top of the cream and spread it gently.

Repeat the process, alternating layers of cookies, raspberry cream, and raspberry jam until all the ingredients have been used.

Finish with a final layer of raspberry cream.

4. Decorate

Spread raspberry jam over the top.

Decorate with fresh raspberries to give it a beautiful homemade appearance.

If desired, sprinkle some crushed cookies around the edges for extra texture.

5. Refrigerate

Cover the dish with plastic wrap or a lid.

Place the Charlotte in the refrigerator for at least 4 hours, though overnight is ideal.

This allows the cookies to soften, the cream to set properly, and the dessert to become firmer for slicing.

6. Serve

Serve well chilled, cut into portions.
