Easy Thai Coconut Curry with Shrimp 

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons Thai red curry paste (adjust for spice preference)
  • 1 can (14 oz) coconut milk
  • 1 red bell pepper, sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar (or palm sugar)
  • 1 lime, juiced
  • ½ cup fresh basil or cilantro, chopped
  • Salt to taste
  • Cooked jasmine rice (for serving)
