🍔 Homemade Brioche Burger Buns (Soft, Buttery & Better Than Store-Bought)
These homemade brioche buns are incredibly soft, fluffy, and rich with buttery flavor. Perfect for burgers, sandwiches, breakfast buns, or meal prep—they stay fresh for days and freeze beautifully.
📝 Ingredients
Bread flour – 4 cups (500g)
Instant yeast – 2¼ tsp (7g)
Granulated sugar – 3 tbsp (38g)
Salt – 1½ tsp (9g)
Warm whole milk – ¾ cup (180ml)
Large eggs – 3 (about 150g), room temperature
Unsalted butter, softened – 5 tbsp (70g)
Egg wash – 1 egg + 1 tbsp (15ml) milk
Sesame seeds (optional)
👩🍳 Method
Step 1 – Make the Dough
Mix bread flour, yeast, sugar, and salt. Add warm milk and eggs. Mix until a rough dough forms.
Step 2 – Add Butter
Gradually knead in the softened butter until fully incorporated. Continue kneading for 10–12 minutes until the dough is smooth, elastic, and slightly tacky.
Step 3 – First Rise
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1½–2 hours, or until doubled in size.
Step 4 – Shape the Buns
Divide into 8 equal pieces (about 115g each). Shape into smooth balls and place them on a parchment-lined baking tray, leaving space between each bun.
Step 5 – Second Rise
Cover loosely and let the buns rise for 45–60 minutes until puffy. Brush with egg wash and sprinkle with sesame seeds if desired.
Step 6 – Bake
Bake in a preheated oven at 375°F (190°C) for 15–18 minutes, or until deep golden brown.
Cool on a wire rack for at least 20 minutes before slicing.
