If you want to make the fries yourself, here’s a simple method.
Ingredients
- 4 large russet potatoes
- Vegetable or peanut oil, for frying
- Salt, to taste
Instructions
- Peel the potatoes if desired and cut them into evenly sized sticks.
- Place them in cold water for at least 30 minutes to remove some surface starch.
- Drain and dry them very thoroughly.
- Heat oil for the first fry to about 325°F (163°C).
- Fry the potatoes in batches until tender but still pale.
- Remove and drain.
- Increase the oil temperature to about 375°F (190°C).
- Fry the potatoes again until golden and crispy.
- Drain on a rack or paper towels.
- Season immediately with salt.
