These cheesy lasagna roll-ups are packed with seasoned ground beef, creamy ricotta, and lots of melted mozzarella. They’re a comforting family dinner that’s as impressive as it is delicious!
Ingredients
For the Lasagna Roll-Ups
- 12 lasagna noodles
- 500 g (1.1 lb) ground beef
- 2 tablespoons olive oil
- ½ onion, finely chopped
- 3 garlic cloves, minced
- 2 cups pasta sauce (tomato sauce)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper, to taste
For the Ricotta Filling
- 400 g (14 oz) ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
For the Topping
- 2 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Cook the lasagna noodles. Bring a large pot of salted water to a boil and cook the lasagna noodles until al dente according to the package directions. Drain and lay them flat on a clean surface or lightly oiled baking sheet to prevent sticking.
- Prepare the beef filling. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent. Stir in the garlic and cook for about 1 minute. Add the ground beef and cook until browned, breaking it apart with a spoon. Stir in 1 cup of the pasta sauce, the oregano, basil, salt, and pepper. Simmer for about 10 minutes, then remove from the heat and let cool slightly.
- Make the ricotta mixture. In a large bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella, the Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until smooth and creamy.
- Assemble the roll-ups. Spread a layer of the ricotta mixture over each lasagna noodle. Top with a spoonful of the seasoned beef mixture, then carefully roll up each noodle.
- Arrange in the baking dish. Spread a layer of the remaining pasta sauce over the bottom of a 9×13-inch baking dish. Place the lasagna roll-ups seam-side down in the dish. Spoon the remaining sauce over the top.
- Add the cheese. Sprinkle the roll-ups evenly with the remaining 2 cups of mozzarella cheese and the ¼ cup of Parmesan cheese.
- Bake. Preheat the oven to 190°C (375°F). Bake for 25 to 30 minutes, or until the cheese is fully melted, bubbly, and lightly golden.
- Serve. Let the lasagna roll-ups rest for 10 minutes before serving. Garnish with freshly chopped parsley.
