MOM’S MILK TORRIJAS (SPANISH-STYLE FRENCH TOAST)
Ingredients
For 10–12 torrijas:
- 1 loaf of day-old bread, such as a baguette or rustic bread
- 600 ml milk
- 3 eggs
- 4 tablespoons sugar
- 1 cinnamon stick
- 1 teaspoon ground cinnamon
- Peel of 1 lemon or orange (without the white pith)
- 1 teaspoon vanilla extract (optional)
- Enough oil for frying
- Extra sugar for sprinkling
- Extra ground cinnamon for sprinkling
Detailed Instructions
1. Slice the Bread
Cut the bread into thick slices, about 2 cm (3/4 inch) thick.
Day-old bread works best because it absorbs the milk well without falling apart too quickly.
2. Prepare the Flavored Milk
In a saucepan, combine the milk, 4 tablespoons of sugar, the cinnamon stick, and the lemon or orange peel.
Heat over medium heat until the milk is very warm but not boiling vigorously. Once it begins to steam, remove it from the heat.
Add the vanilla extract if using.
Let the milk sit for 10 minutes so it can absorb the flavors of the cinnamon and citrus peel.
3. Soak the Bread
Place the bread slices in a large dish.
Slowly pour the warm milk over them.
Allow the bread to soak for 2–4 minutes on each side. The slices should become moist and soft, but not so wet that they fall apart.
If the bread is very soft, reduce the soaking time.
4. Coat with Egg
Beat the eggs in a shallow bowl.
Carefully lift each slice of bread, allowing any excess milk to drip off, then coat both sides with the beaten egg.
5. Fry the Torrijas
Heat oil in a frying pan over medium heat.
Fry the torrijas on both sides until golden brown, about 2–3 minutes per side.
Do not use very high heat, as they may brown too quickly on the outside while remaining undercooked inside.
6. Drain and Sprinkle
Remove the torrijas and place them on paper towels to absorb excess oil.
Mix sugar and ground cinnamon together and sprinkle generously over the torrijas while they are still warm.

The torrijas should be golden and crisp on the outside, soft and juicy on the inside, with delicious flavors of milk, cinnamon, and a hint of citrus.
The ideal texture is moist and tender, but not falling apart.
