OLD-FASHIONED HAM & BEAN SOUP 🥣
Ingredients:
- 2 cups cooked ham, diced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1/2 teaspoon black pepper
- Salt, to taste
Directions:
- Sauté onion, carrots and celery in a little oil until softened, about 5 minutes. Add garlic and cook 30 seconds.
- Add ham, beans, chicken broth and pepper. Bring to a boil, then reduce to a gentle simmer.
- Simmer uncovered 25–30 minutes, stirring occasionally.
- Mash some of the beans against the side of the pot for a thicker, creamier broth. Taste and add salt only if needed.
- Serve hot.
