🥘 Slow Cooker Garlic Herb Chicken & Potatoes
Tender chicken, creamy potatoes, carrots, and a savory garlic-herb sauce all cooked together in the slow cooker. It’s the kind of meal you can put together in minutes and let the slow cooker do the work.
Ingredients
- 2½–3 lb (1.1–1.4 kg) boneless, skinless chicken thighs
- 1½ lb (680 g) baby potatoes, halved
- 3 large carrots, peeled and cut into chunks
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 cup (240 ml) chicken broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp Worcestershire sauce
- 2 tbsp butter
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the vegetables.
Place the potatoes, carrots, and sliced onion in the bottom of the slow cooker.
2. Season the chicken.
Pat the chicken thighs dry. Season both sides with salt, pepper, paprika, thyme, and rosemary.
3. Add everything to the slow cooker.
Place the chicken on top of the vegetables. Add the minced garlic, Worcestershire sauce, chicken broth, and olive oil.
4. Add the butter.
Place small pieces of butter over the chicken and vegetables.
5. Cook.
Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken reaches 165°F/74°C internally and the potatoes are tender.
6. Finish and serve.
Sprinkle with fresh parsley before serving. Spoon some of the flavorful cooking juices over the chicken and potatoes.

Serve it with warm crusty bread, green beans, a simple salad, or steamed broccoli. The cooking juices are delicious spooned over the potatoes.
