Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • 1 small onion, finely diced
  • 1 small carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 1 pound (450 g) ground beef (or half beef, half pork)
  • Salt and freshly ground black pepper, to taste
  • ½ cup dry white wine (optional)
  • 1 tablespoon tomato paste
  • 1 (14-ounce/400 g) can crushed tomatoes
  • ½ cup whole milk
  • ¼ teaspoon freshly grated nutmeg (optional)
  • ¼ cup grated Parmesan cheese, plus more for serving
  • 1 tablespoon chopped fresh parsley (optional)

For Serving

  • 12 ounces (340 g) tagliatelle, fettuccine, or pappardelle
  • Extra Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve about ½ cup of the pasta water, then drain.

Step 2: Sauté the Vegetables

Heat the olive oil and butter in a large skillet over medium heat.

Add the onion, carrot, and celery. Cook for about 5 minutes, stirring occasionally, until softened.

Stir in the garlic and cook for another 30 seconds.

Step 3: Brown the Meat

Add the ground beef (or beef and pork mixture).

Break it up with a wooden spoon and cook until browned, about 5–6 minutes.

Season with salt and black pepper.

Step 4: Add the Wine

If using, pour in the white wine and let it simmer for about 2 minutes, allowing most of the liquid to evaporate.

Step 5: Build the Sauce

Stir in the tomato paste and cook for 1 minute.

Add the crushed tomatoes, milk, and nutmeg.

Simmer for 8–10 minutes, stirring occasionally, until the sauce thickens slightly.

Step 6: Finish the Sauce

Stir in the grated Parmesan cheese.

Taste and adjust the seasoning with additional salt and pepper if needed.

If the sauce becomes too thick, stir in a splash of the reserved pasta water.

Step 7: Serve

Toss the cooked pasta with the sauce until well coated.

Serve immediately with extra Parmesan cheese and a sprinkle of chopped parsley or fresh basil.

Tips for the Best Bolognese

  • Finely dice the vegetables so they melt into the sauce.
  • Whole milk gives the sauce a smoother, richer texture.
  • Freshly grated Parmesan adds the best flavor.
  • For a deeper taste, use a mix of ground beef and pork.
  • Leftovers often taste even better the next day.

Storage

Store leftover Bolognese in an airtight container in the refrigerator for up to 4 days.

Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop.
