Step 1: Clean the Gizzards
Rinse under cold water, trim tough silver skin or fat. Soak in water + vinegar or lemon juice for 10–15 minutes, rinse & pat dry.
Step 2: Marinate
Place gizzards in a bowl, pour buttermilk over them. Cover & refrigerate for 2+ hours, preferably overnight.
Step 3: Prepare the Breading
Mix flour, cornstarch, garlic powder, onion powder, paprika, salt, & pepper.
Step 4: Coat the Gizzards
Remove gizzards from marinade (do not dry). Toss in flour mixture, coat completely. For extra crispiness, double-dip: back in buttermilk, then coat in flour again. Let rest on a tray for 10–15 minutes before frying.
Step 5: Fry to Perfection
Heat oil to 350–365°F (175–185°C). Fry gizzards in small batches for 5–7 minutes, until deep golden brown. Drain on a paper towel-lined plate.
Serving Ideas
Pair with: Ranch, spicy mayo, coleslaw, cornbread, or mashed potatoes.

Can I Bake Instead of Fry?
Yes, but it won’t be as crispy. Bake at 400°F (200°C) for 25–30 minutes or use an air fryer.
