Instructions

Place the eggs and cottage cheese in a blender or food processor.

Blend until the mixture is smooth, liquid, and free of lumps.

Heat a small non-stick skillet over medium-low heat and lightly grease it with a few drops of oil or a small amount of butter.

Pour a small portion of the batter into the pan and gently swirl it to form a thin crepe.

Cook for about 2–3 minutes, until the surface looks set and the edges begin to lift away from the pan.

Carefully flip the crepe and cook for an additional 1–2 minutes.

Repeat the process with the remaining batter, lightly greasing the pan as needed.

Fill the crepes with your favorite ingredients and fold or roll them before serving.

Storage

Allow the crepes to cool completely before storing.

Place them in an airtight container, separating each crepe with small pieces of parchment paper to prevent sticking.

They will keep in the refrigerator for 2–3 days.

To serve, simply warm them for a few seconds in a skillet or microwave.

Result

These crepes turn out soft, flexible, light, and delicious. They are high in protein, very satisfying, and perfect for enjoying with either sweet or savory fillings. 🥞✨
