Ingredients

  • 3 eggs
  • 1 cup sugar (about 200 g)
  • 1/2 cup vegetable oil (120 ml)
  • 1/2 cup milk (120 ml)
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour (180 g)
  • 1 tablespoon baking powder (10 g)
  • 1 pinch of salt

Instructions

Blend the Wet Ingredients and Sugar

Place the eggs, sugar, oil, milk, and vanilla extract into a blender.

Blend until the mixture is smooth and well combined.

Add the Dry Ingredients

Add the flour, baking powder, and pinch of salt.

Blend briefly, just until everything is incorporated. Do not overmix.

Prepare the Muffin Pan

Line a 12-cup muffin tin with paper liners.

Fill the Liners

Pour the batter into the liners, filling each about 3/4 full.

Bake

Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Enjoy

Remove the muffins from the pan and place them on a wire rack to cool completely.
