NO-BAKE AND SERIOUSLY DELICIOUS! π

They’re rich and chocolatey, packed with creamy peanut butter, and have just the right amount of sweetness. They’re perfect when you need a quick dessert but don’t want to turn on the oven.
π Ingredients
- 1 cup creamy peanut butter
- Β½ cup honey
- ΒΌ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- ΒΌ teaspoon salt
- 2 cups quick-cooking oats
- Β½ cup shredded unsweetened coconut
- Β½ cup mini chocolate chips
Optional toppings
- Melted chocolate
- Chopped peanuts
- Flaked sea salt
- Extra shredded coconut
- Mini chocolate chips
π©βπ³ Instructions
1. Mix the wet ingredients
Add the peanut butter and honey to a medium saucepan.
Warm over low heat, stirring constantly, just until the peanut butter becomes smooth and the mixture is easy to stir.
Don’t let it boil.
Remove from the heat and stir in the cocoa powder, vanilla, and salt.
2. Add the dry ingredients
Add the oats and shredded coconut.
Stir until everything is thoroughly coated with the chocolate-peanut-butter mixture.
Let the mixture cool for a minute or two, then gently fold in the mini chocolate chips.
3. Form the treats
Line a baking sheet or large plate with parchment paper.
Using a tablespoon or small cookie scoop, scoop portions of the mixture onto the parchment.
For bite-sized treats, use about 1 tablespoon each.
Gently press and shape them into small rounds.
4. Chill
Place the treats in the refrigerator for 20β30 minutes, or until firm.
If you’re in a hurry, place them in the freezer for about 10β15 minutes.
5. Add toppings
Once firm, you can drizzle them with melted chocolate and sprinkle with chopped peanuts, coconut, or a tiny pinch of flaky sea salt.
Let the chocolate set before serving.
π« Easy Chocolate Drizzle
For an extra-special finish, melt:
- Β½ cup chocolate chips
- 1 teaspoon coconut oil
Microwave in 15β20 second intervals, stirring between each, until smooth.
Drizzle over the chilled treats and let the chocolate harden.
π‘ Recipe Tips
Too sticky? Add another ΒΌ cup of oats until the mixture is easy to shape.
Too dry? Add another tablespoon of peanut butter or honey.
Want more crunch? Add chopped roasted peanuts.
Love chocolate? Add extra mini chocolate chips or dip the bottoms in melted chocolate.
Prefer a softer treat? Keep them refrigerated rather than frozen.
π§ Storage
Store the treats in an airtight container in the refrigerator for up to 1 week.
You can also freeze them for up to 2β3 months. Place parchment between the layers so they don’t stick together.
Let them sit at room temperature for a few minutes before eating.
