Graham Cracker Crust
- 2¼ cups graham cracker crumbs
- ½ cup butter, melted

Cream Cheese Pineapple Filling
- 2 packages (8 oz / 250 g each) cream cheese, softened to room temperature
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 can (20 oz / 567 g) crushed pineapple, very well drained
- 1 container (8 oz / 226 g) whipped topping, thawed

- Extra whipped topping, optional
- Graham cracker crumbs, optional
- Pineapple pieces or maraschino cherries, optional
👩🍳 Instructions
1. Make the Graham Cracker Crust
Place the graham cracker crumbs in a bowl.
Pour in the melted butter and add the sugar if using.
Stir until the crumbs are evenly moistened and the mixture resembles wet sand.
Reserve about ¼ cup of the crumbs if you’d like to sprinkle some over the finished dessert.
Press the remaining mixture firmly into the bottom of a 9×13-inch baking dish.
Place the crust in the refrigerator while you prepare the filling.
2. Prepare the Cream Cheese
Place the softened cream cheese in a large mixing bowl.
Beat with an electric mixer until completely smooth and creamy.
Add the powdered sugar and vanilla extract.
Beat again until smooth and well combined.
3. Add the Pineapple
Make sure the crushed pineapple has been drained extremely well.
Excess pineapple juice can make the filling too loose.
Fold the drained pineapple into the cream cheese mixture until evenly distributed.
4. Fold in the Whipped Topping
Gently fold the thawed whipped topping into the pineapple and cream cheese mixture.
Don’t overmix—you want to keep the filling light and fluffy.
5. Assemble the Dessert
Remove the graham cracker crust from the refrigerator.
Spoon the pineapple cream cheese filling over the crust.
Spread it evenly all the way to the edges.
Top with additional whipped topping if desired.
Sprinkle reserved graham cracker crumbs over the top for a pretty finishing touch.
You can also decorate with small pineapple pieces or maraschino cherries.
6. Chill
Cover the dish and refrigerate for at least 4 hours, preferably overnight.
The chilling time allows the cream cheese filling to firm up and makes the dessert much easier to slice.
7. Serve
Cut into squares and serve cold.
For especially clean slices, chill the dessert overnight and use a sharp knife wiped clean between cuts.
🍍 Important Pineapple Tip
Drain the pineapple really well!
This is one of the most important steps in the recipe. Crushed pineapple contains quite a bit of juice, and too much liquid can make a no-bake cream cheese filling loose.
For an extra-dry pineapple, place the crushed pineapple in a fine-mesh strainer and gently press it with the back of a spoon to remove excess juice.

Add coconut: Fold ½ cup shredded coconut into the filling for a tropical twist.
Add pecans: Sprinkle ½ cup finely chopped pecans over the top or mix them into the crust.
Make it extra pineapple-y: Add a small amount of pineapple-flavored gelatin to the filling for a stronger pineapple flavor and firmer texture.

Frozen version: Freeze until firm for a delicious frozen pineapple dessert. Allow it to soften slightly in the refrigerator before serving.
