Ingredients
For the First Fermentation

- 1 teaspoon caraway seeds, optional
For Bottling
- 1–2 teaspoons raw or regular honey per 16-ounce (475 ml) bottle
- Fermented beet kvass, strained
- Optional: a small squeeze of lemon juice
Equipment
- 1-quart (1-liter) fermentation jar
- Fermentation weight, if available
- Clean cloth or fermentation lid

- Pressure-rated bottles suitable for carbonation

🥣 Step 1: Prepare the Beets
Wash the beets thoroughly.
Trim away the tops and roots and peel them if desired. Cut the beets into roughly ½-inch cubes.
There’s no need to make the pieces perfectly uniform.
Place the beet cubes into your clean fermentation jar.
If you’re using garlic, ginger, or caraway, add them now.
🧂 Step 2: Make the Salt Brine
Dissolve approximately 27 grams of non-iodized salt in 4 cups (946 ml) of water.
A kitchen scale is the most reliable way to measure salt for fermentation because different types of salt have different volumes by weight.
Pour the brine over the beets.
The vegetables should remain completely submerged.
If necessary, use a fermentation weight to keep the beet pieces underneath the liquid.
Why the salt?
Salt helps create an environment favorable to lactic-acid fermentation while discouraging many unwanted microorganisms.

Cover the jar with a fermentation lid or another appropriate setup that allows fermentation gases to escape.
Keep the jar at room temperature, away from direct sunlight.
The fermentation time can vary with temperature and your preferred flavor, but about 3–5 days is a reasonable starting point.
You may notice:
- Small bubbles

For carbonation, add approximately:
1–2 teaspoons honey per 16-ounce (475 ml) bottle.
Start toward the lower end if you’re new to bottle conditioning.
The honey provides fermentable sugar. Microorganisms remaining in the kvass can consume some of that sugar and produce carbon dioxide, creating the fizz.
Don’t add a large amount of honey thinking it will simply make the drink sweeter.
More honey can mean more fermentation and more pressure.

Using a clean funnel, transfer the kvass into pressure-rated bottles specifically designed for carbonated beverages.
Leave the amount of headspace recommended by the bottle manufacturer.
Seal the bottles.
Don’t use ordinary decorative bottles, thin glass bottles, mason jars, or other containers that aren’t designed to withstand carbonation pressure.

Leave the sealed bottles at room temperature for a short period while carbonation develops.
The exact timing depends on the temperature, amount of honey, microbial activity, and bottle size, so don’t rely on a fixed number of hours as a guarantee.
Check the bottles regularly.
Once the kvass has reached the carbonation level you want, move the bottles to the refrigerator.
Cold temperatures slow fermentation considerably and help preserve the carbonation.
❄️ Step 8: Refrigerate Before Drinking
Chilling the bottles is important.
The colder liquid also holds carbon dioxide more effectively, so your kvass will generally pour more pleasantly once thoroughly chilled.
When opening a bottle for the first time, do so slowly and over a sink, especially if you’re unsure how much pressure has developed.
If it appears excessively pressurized, don’t shake it or point the opening toward anyone.
