For the Sausage and Vegetables
- 1½ pounds Italian sausage, bratwurst, smoked sausage, or your favorite sausage
- 2 large onions, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
- ½ cup water or chicken broth

- 1 cup marinara sauce

- ¾ cup BBQ sauce
- 1 tablespoon honey, optional

- ½ cup yellow or Dijon mustard
- ¼ cup honey
- 2 tablespoons mayonnaise

- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 teaspoon minced garlic
- ¼ teaspoon black pepper
🌶️ Spicy Sauce
- ½ cup hot sauce
- ¼ cup BBQ sauce
- 1 tablespoon honey
👩🍳 Instructions
1. Brown the Sausage
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sausages and cook for about 8–10 minutes, turning occasionally, until nicely browned on the outside.
Remove them from the skillet and set aside.
2. Cook the Onions and Peppers
Add the remaining tablespoon of olive oil to the same skillet.
Add the sliced onions and bell peppers. Cook for 7–8 minutes, stirring occasionally, until they begin to soften and caramelize.
Add the minced garlic, salt, black pepper, Italian seasoning, and red pepper flakes.
Cook for another 1 minute.
3. Add the Sausage Back
Return the sausages to the skillet.
Pour in the water or chicken broth, scraping the flavorful browned bits from the bottom of the pan.
Cover and simmer for 5–7 minutes, or until the sausages are cooked through. If using raw sausage, check that it reaches the appropriate safe internal temperature for the type of sausage you’re cooking.
4. Add Your Sauce
Now comes the fun part!
Choose your favorite sauce and pour it over the sausage, onions, and peppers.
Stir gently to coat everything.
Simmer uncovered for another 3–5 minutes, allowing the sauce to thicken and soak into the onions.
If using the creamy garlic sauce, keep the heat low and stir gently so the cream doesn’t boil.
5. Serve
Serve the sausage and onions hot with plenty of sauce spooned over the top.
For a classic sandwich, place everything inside toasted hoagie or sausage rolls.
Top with shredded Parmesan, mozzarella, provolone, or a sprinkle of fresh parsley if desired.
