🥥 Nigerian-Style Coconut Chips Recipe
Ingredients:
- 1 whole mature coconut
- 2 tablespoons sugar (optional)
- ¼ teaspoon salt
- ½ teaspoon vanilla extract or coconut flavor (optional)
- 1 tablespoon melted butter or coconut oil (optional)
Method:
- Crack the coconut and remove the hard shell.
- Peel off the thin brown skin if you prefer lighter chips.
- Wash and slice the coconut very thinly using a peeler, mandoline, or sharp knife.
- Place the slices in a bowl and add salt, sugar, vanilla and melted butter/coconut oil if using.
- Mix gently until evenly coated.
- Arrange the slices in a single layer on a lined baking tray.
- Bake at 150°C (300°F) for 15–25 minutes, turning halfway through, until lightly golden and crisp.
- Allow them to cool completely—they become crispier as they cool.
🔥 Deep-fried version
For extra-crispy Nigerian-style coconut chips, fry thin coconut slices in moderately hot oil until golden brown, then drain on paper towels.
Tip: Slice the coconut as thinly and evenly as possible so the chips cook at the same rate.
