Flourless, No-Added-Sugar Protein Cake

🍰 Flourless, No-Added-Sugar Protein Cake — Soft, Fluffy & Low-Carb

Craving something sweet without flour or added sugar? This simple little cake is soft, fluffy, high in protein, and comes together in just minutes. It’s a great option when you want a quick low-carb treat without making an entire dessert.

Note: “Virtually no carbs” depends on the ingredients you use. Eggs, Greek yogurt, protein powder, and other ingredients can still contribute some carbohydrates, so check the nutrition label of your specific products.

🥚 Ingredients

  • 2 large eggs
  • ¼ cup (60 g) plain Greek yogurt
  • 2 tablespoons unsweetened protein powder, preferably vanilla
  • 1–2 tablespoons granulated zero-calorie sweetener, such as monk fruit or erythritol
  • ½ teaspoon vanilla extract
  • ¼ teaspoon baking powder
  • Pinch of salt

Optional Toppings

  • A few fresh berries
  • Unsweetened shredded coconut
  • Sugar-free chocolate chips
  • A spoonful of unsweetened Greek yogurt
  • Cinnamon

👩‍🍳 Instructions

1. Mix the ingredients

Add the eggs, Greek yogurt, protein powder, sweetener, vanilla, baking powder, and salt to a small bowl.

Whisk until completely smooth and there are no obvious lumps.

Let the mixture sit for 1–2 minutes so the protein powder can absorb some of the moisture.

2. Prepare your dish

Lightly grease a small microwave-safe ramekin or bowl.

Pour in the batter.

Don’t fill the container more than about two-thirds full because the cake will puff up as it cooks.

3. Microwave

Microwave on high for 60–90 seconds.

Start checking at 60 seconds. The center should look set but still slightly moist.

Avoid overcooking—the cake will continue to firm up as it cools, and too much microwave time can make it rubbery.

4. Let it rest

Allow the cake to rest for 1–2 minutes before eating.

It will become softer and more cake-like as it cools slightly.

🔥 Oven Method

If you’d rather bake it:

  1. Preheat the oven to 350°F (175°C).
  2. Pour the batter into a greased small ramekin.
  3. Bake for approximately 15–20 minutes.
  4. Remove when the center is set and a toothpick inserted near the center comes out mostly clean.
  5. Cool for a few minutes before serving.

🍫 Chocolate Version

Turn it into a chocolate treat by replacing the vanilla protein powder with chocolate protein powder and adding:

  • 1 tablespoon unsweetened cocoa powder
  • A little extra sweetener if needed

For an even richer version, add a few sugar-free chocolate chips.

🍓 Strawberry Cheesecake Version

After cooking, top with:

  • 1 tablespoon Greek yogurt
  • A few sliced strawberries
  • A sprinkle of cinnamon or a little zero-sugar sweetener

☕ Cinnamon Roll Version

Add:

  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla
  • A tiny pinch of nutmeg

Top with a spoonful of Greek yogurt mixed with a little zero-calorie sweetener.

⭐ Tips for a Soft, Fluffy Texture

Don’t overcook it. This is the most important tip. Protein-rich cakes can become firm or rubbery when cooked too long.

Use a good protein powder. Different protein powders absorb liquid differently, so you may need to adjust the yogurt slightly.

Whisk thoroughly. This helps create a smoother, lighter texture.

Let it rest. Giving the cake a minute or two after cooking allows the texture to settle.
