Ingredients (makes 10–14 sandwiches)
- 10–14 English muffins
- 14–18 large eggs
- ¾–1¼ cups shredded mozzarella (or your favorite cheese)
- ⅓–⅔ cup milk
- 3–5 tablespoons butter (plus extra for greasing)
- 1½–3 tablespoons sour cream (or Greek yogurt)
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 10–14 slices cheese (cheddar, Monterey Jack, etc.)
- 20–28 thin slices deli ham (or Canadian bacon/sausage patties)
Instructions
- Preheat the oven to 350°F. Generously butter a 9×13 baking dish.
- Whisk together the eggs, milk, sour cream, salt, and pepper. Stir in the shredded mozzarella. Pour into the dish and bake 20–25 minutes until puffed and set. Cool 10 minutes, then cut into squares.
- Split the English muffins, butter the cut sides, and broil 2–4 minutes until golden and crisp.
- Assemble each sandwich: bottom muffin → egg square → cheese slice → 2 slices ham → top muffin.
- Wrap each sandwich tightly in plastic wrap, place in a freezer bag, and freeze for up to 2 months (or refrigerate up to 1 week).
Quick Reheat
- From frozen: Microwave 2½–3½ minutes on a paper towel (flip halfway).
- Thawed: Microwave 45–90 seconds or air fry at 350°F for 4–6 minutes.
