🥣 Homemade Condensed Soup Mixes — 3 Pantry Favorites

So many comfort-food dinners begin with one simple ingredient: a can of condensed soup! From tuna casserole and American chop suey to cowboy casserole and creamy chicken noodles, I’m always reaching for one. Keeping homemade dry versions in the pantry makes those favorite meals even easier.

Here are three mixes I love keeping ready: Cream of Chicken, Cream of Mushroom, and Tomato Soup Mix.

  1. Homemade Cream of Chicken Soup Mix
    Ingredients
  • 2 cups nonfat dry milk powder
  • ¾ cup cornstarch
  • ⅓ cup chicken bouillon powder
  • 2 tablespoons dried minced onion
  • 1½ teaspoons garlic powder
  • 1 teaspoon dried parsley
  • ¾ teaspoon black pepper
  • ½ teaspoon dried thyme
    Instructions
    Combine everything thoroughly and transfer to an airtight jar.
    To Make One Can: Whisk ⅓ cup dry mix with 1¼ cups water in a saucepan. Cook over medium heat, stirring frequently, until thick and creamy.
  1. Homemade Cream of Mushroom Soup Mix
    Ingredients
  • ¾ cup cornstarch
  • 2¼ cups dry milk powder
  • ½ cup finely ground dehydrated mushrooms
  • 2 tablespoons dried minced onion
  • 2 teaspoons mushroom or vegetable bouillon powder
  • 1 teaspoon garlic powder
  • ¾ teaspoon dried thyme
  • ½ teaspoon black pepper
    Instructions
    Mix everything together until evenly distributed and store in an airtight container.
    To Make One Can: Combine ⅓ cup mix with 1¼ cups water. Cook while whisking until smooth and thickened.
  1. Homemade Tomato Soup Mix
    Ingredients
  • 2 cups tomato powder
  • ¾ cup dry milk powder
  • ½ cup cornstarch
  • ⅓ cup granulated sugar
  • 1 tablespoon onion powder
  • 2 teaspoons vegetable bouillon powder
  • 1½ teaspoons garlic powder
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper
    Instructions
    Whisk all the dry ingredients together and keep tightly sealed in a clean, dry jar.
    To Make: Start with ½ cup dry mix and 1½ cups hot water, whisking until smooth. Simmer gently until it reaches the consistency you like. Add a little more water for a thinner soup.

Storage
Keep all three mixes in airtight containers in a cool, dry pantry. For best quality, make smaller batches that you’ll use within a few months, especially when the mixes contain milk powder.

Ways to Use Them
Use these homemade mixes anywhere you’d normally reach for condensed soup—casseroles, creamy noodles, skillet dinners, pot pies, gravies, or quick soups.
