What You’ll Need

  • 3¾ pounds fresh cucumbers
  • 1½ cups cold filtered water, for cucumber cubes
  • Parchment paper
  • Freezer-safe bags or airtight containers

Method 1: Flash-Frozen Cucumber Slices

  1. Prep the Cucumbers�Wash and dry the cucumbers thoroughly. Leave the peel on for extra color or remove it if you prefer.
  2. Cut Into Slices�Trim away the ends, then slice the cucumbers into approximately ¼-inch rounds.
  3. Freeze Individually�Arrange the slices in one layer on a parchment-lined baking sheet, making sure they aren’t piled on top of one another.
  4. Flash Freeze�Place the tray in the freezer for approximately 2–3 hours, or until the cucumber slices are frozen solid.
