Baked Stuffed Onions

These baked stuffed onions are tender, flavorful, and filled with a delicious mixture of seasoned ground meat and melted cheese. They make a comforting main dish or a hearty side for any family meal.

Ingredients (Serves 4)

  • 8 medium white onions
  • 250 g (9 oz) ground beef or ground pork
  • 1 tomato, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons chopped onion (reserved from the centers of the onions)
  • 1 tablespoon vegetable oil or olive oil
  • Salt and black pepper, to taste
  • ½ teaspoon dried oregano
  • ½ cup shredded cheese (Manchego, Oaxaca, or mozzarella)
  • 2 tablespoons heavy cream or table cream (optional)

Instructions

  1. Prepare the onions: Peel the onions and trim the ends if needed. Carefully remove the centers, leaving about two outer layers intact to create onion “shells.” Finely chop the removed onion centers and reserve 2 tablespoons for the filling.
  2. Cook the filling: Heat the oil in a skillet over medium heat. Sauté the chopped onion until softened, then add the garlic and cook for 1 minute. Add the ground beef or pork and cook until browned.
  3. Season: Stir in the chopped tomato, oregano, salt, and pepper. Cook for about 5–7 minutes, or until most of the liquid has evaporated. If using, stir in the cream and cook for another minute.
  4. Stuff the onions: Preheat the oven to 375°F (190°C). Fill each onion shell with the meat mixture and top generously with the shredded cheese.
  5. Bake: Arrange the stuffed onions in a lightly greased baking dish. Cover with aluminum foil and bake for 30–35 minutes. Remove the foil and bake for another 10–15 minutes, or until the onions are tender and the cheese is melted and lightly golden.
  6. Serve: Let the onions cool for a few minutes before serving. Enjoy them on their own or with rice, mashed potatoes, or a fresh green salad.
