(Taqueria-Style Synchronizadas)
A great giant sincronizada should have a crispy, golden tortilla on the outside, plenty of perfectly melted cheese, and a juicy, flavorful filling. This taqueria-style version is perfect for sharing between two people or enjoying as a hearty meal.
Ingredients (Makes 2 Giant Synchronizadas)
- 4 large flour tortillas (12–13 inches / 30–32 cm)
- 400 g (14 oz) sliced ham
- 350 g (12 oz) shredded Oaxaca cheese
- 150 g (5 oz) shredded Chihuahua cheese or Manchego cheese
- 2 tablespoons butter
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano (optional)
- Freshly ground black pepper, to taste
For Serving
- Guacamole
- Pico de gallo
- Red salsa or green salsa
- Pickled jalapeños
- Sour cream (optional)
Instructions
- Prepare the cheese mixture. In a bowl, combine the shredded Oaxaca cheese with the Chihuahua or Manchego cheese. Mixing the cheeses creates a creamier filling and helps achieve the perfect gooey melt.
- Butter the tortilla. Lightly spread butter over one side of a flour tortilla.
- Add the cheese. Place the tortilla, buttered side down, on a clean surface and spread a generous layer of the cheese mixture over almost the entire tortilla.
- Add the ham. Arrange the sliced ham evenly over the cheese.
- Season. Sprinkle with the garlic powder, black pepper, and dried oregano, if using.
- Top with more cheese. Add another generous layer of the cheese mixture over the ham to help hold everything together.
- Assemble. Place a second tortilla on top and gently press down.
- Cook. Heat a large skillet or griddle over medium heat. Cook the sincronizada for 3–4 minutes per side, or until both tortillas are golden brown and crispy and the cheese is completely melted.
- Slice and serve. Remove from the heat and let it rest for 1 minute before cutting into 6 or 8 large wedges.
Serving Suggestions
Serve the sincronizadas immediately on a large platter or wooden serving board. Pair them with bowls of fresh guacamole, pico de gallo, red or green salsa, and pickled jalapeños. For a complete meal, add a side of French fries or a fresh green salad.
