Come Home to This After a 14-Hour Shift: Steak, Garlic Mashed Potatoes & Roasted Asparagus 🥩🥔🌿

“Would you come home from a 14-hour shift to this?” 👀

After a long day, there are few things more comforting than a juicy, beautifully seared steak with creamy mashed potatoes, roasted asparagus, and a generous pat of garlic-herb butter melting right over the top.

This is the kind of dinner that feels like a restaurant meal but is completely doable at home. The combination of a deeply browned steak, buttery potatoes, and slightly charred asparagus makes a satisfying plate that works just as well for a weeknight treat as it does for a special dinner. Similar steak-and-mashed-potato combinations are a classic for good reason. (Lemon8)

And honestly? After 14 hours at work, I’d say this plate is absolutely worth coming home to. 😂

🥩 Steak with Garlic-Herb Butter, Mashed Potatoes & Asparagus

Serves: 2
Prep time: 15 minutes
Cook time: 30–35 minutes
Total time: About 45–50 minutes

Ingredients

For the Steak

  • 2 ribeye, New York strip, or sirloin steaks, about 1–1½ inches thick
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika, optional
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, smashed
  • 2–3 sprigs fresh rosemary or thyme

For the Garlic-Herb Butter

  • 4 tablespoons softened unsalted butter
  • 1 garlic clove, finely minced
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon fresh thyme
  • ¼ teaspoon black pepper
  • Pinch of salt

For the Creamy Mashed Potatoes

  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons butter
  • ½ cup warm milk or heavy cream, plus more if needed
  • 2 cloves garlic
  • ½ teaspoon salt, plus more for the cooking water
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese, optional

For the Roasted Asparagus

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ lemon

How to Make It

1. Make the Garlic-Herb Butter

In a small bowl, combine the softened butter, minced garlic, parsley, thyme, salt, and black pepper.

Mix until everything is evenly incorporated.

Spoon the butter onto a piece of plastic wrap or parchment paper and shape it into a small log. Refrigerate until firm.

You can also simply keep it soft and spoon it directly onto the finished steak.

2. Prepare the Potatoes

Peel the potatoes if desired and cut them into evenly sized chunks.

Place them in a large pot and cover with cold, salted water.

Add the garlic cloves.

Bring to a boil, then reduce the heat and simmer for about 15–20 minutes, or until the potatoes are completely fork-tender.

Drain thoroughly.

Return the potatoes to the warm pot for a minute or two to allow excess moisture to evaporate.

Add the butter and begin mashing.

Slowly pour in the warm milk or cream until the potatoes reach your preferred consistency.

Season with salt and pepper.

For an extra-rich version, stir in Parmesan cheese.

Don’t overmix the potatoes. Overworking them can make mashed potatoes sticky instead of fluffy.

3. Roast the Asparagus

Preheat the oven to 425°F (220°C).

Trim the woody ends from the asparagus.

Place the asparagus on a baking sheet and toss with olive oil, salt, pepper, and garlic powder.

Spread the spears out in a single layer. Avoid crowding them so they roast rather than steam. (EatingWell)

Roast for approximately 8–12 minutes, depending on the thickness of the asparagus.

You want the stalks tender but still slightly crisp, with some beautiful browned edges.

Finish with a squeeze of fresh lemon juice.

4. Season the Steak

Remove the steaks from the refrigerator and pat them very dry with paper towels.

Season both sides generously with salt, black pepper, garlic powder, and smoked paprika if using.

Drying the surface well helps you achieve that gorgeous browned crust.

5. Sear the Steak

Heat a heavy skillet—cast iron is excellent—over medium-high to high heat.

Add the oil.

When the pan is very hot, carefully place the steaks in the skillet.

Sear without moving them for approximately 2–4 minutes, depending on thickness and desired crust.

Flip and cook the other side.

Add the butter, smashed garlic, and rosemary or thyme.

As the butter melts, tilt the pan slightly and repeatedly spoon the garlic-herb butter over the steaks.

Continue cooking until the steak reaches your desired internal temperature.

For food safety, USDA guidance recommends cooking whole cuts of beef to 145°F (63°C) and allowing them to rest for at least 3 minutes. (QVC)

A meat thermometer is the easiest way to get consistent results.

6. Let the Steak Rest

Transfer the steaks to a cutting board or plate.

Don’t immediately cut into them.

Let them rest for about 5 minutes.

This gives the meat time to settle before serving.

Top each steak with a generous slice of the garlic-herb butter while it’s resting so it begins melting over that hot crust.

7. Build Your Plate

Spoon a generous mound of creamy mashed potatoes onto each plate.

Place the steak alongside.

Add a pile of roasted asparagus.

Finish the steak with another small piece of garlic-herb butter and let it melt across the surface.

If you have any juices or browned butter left in the skillet, spoon a little over the steak and potatoes.

A final sprinkle of fresh parsley makes the whole plate look restaurant-worthy.

🔥 Tips for an Incredible Steak

Pat the steak dry.

Moisture is the enemy of a great sear. A dry surface helps the steak develop a deeper browned crust.

Don’t constantly flip it.

Give the steak time to develop color before turning it.

Use a thermometer.

Steak thickness varies, so cooking by time alone isn’t always reliable.

Don’t skip the rest.

A few minutes of resting makes the finished steak much more enjoyable.

Don’t overcrowd the pan.

If you’re cooking several steaks, use a large enough pan or cook them in batches.

🥔 The Secret to Creamy Mashed Potatoes

For especially creamy potatoes, Yukon Golds are an excellent choice.

For a lighter, fluffier mash, Russets work beautifully.

The most important rule?

Don’t beat them to death.

Mash just until smooth and add your warm butter and dairy gradually.

Cold milk can cool the potatoes and make it harder to get that luxurious texture, so warm it first.

🌿 Easy Asparagus Upgrades

Want to change things up?

Try adding:

  • Fresh lemon zest
  • Grated Parmesan
  • Minced garlic
  • Red pepper flakes
  • Balsamic glaze
  • A sprinkle of toasted almonds
  • A little freshly grated Parmesan after roasting

The slight char and freshness of asparagus provide a nice contrast to the richness of steak and mashed potatoes. (Lemon8)

Make It Even More Special

For a steakhouse-style dinner, add a quick pan sauce after removing the steak.

Keep the browned bits in the skillet and add:

  • ½ cup beef broth
  • 1 teaspoon Dijon mustard
  • 1 tablespoon butter
  • 1 teaspoon Worcestershire sauce
  • Fresh black pepper

Simmer for a few minutes, scraping up the browned bits from the bottom of the pan.

Spoon the sauce over the steak and mashed potatoes.

Now we’re talking. 😍

What to Serve With It

This plate is already a complete meal, but you can add:

  • Garlic bread
  • Caesar salad
  • Sautéed mushrooms
  • Caramelized onions
  • Dinner rolls
  • Creamed spinach
  • Roasted Brussels sprouts
  • A simple cucumber and tomato salad

Classic steakhouse sides like mashed potatoes and fresh vegetables have remained popular because they balance the richness of the main course while still feeling comforting and substantial. (Simply Recipes)
