Servings

Makes about 3 cups

Ingredients

  • 1 pound (450 g) fresh strawberries, hulled and halved (or quartered if large)
  • 1½ cups (300 g) granulated sugar
  • ½ cup (120 ml) apple cider vinegar
  • 2–3 fresh jalapeños, thinly sliced (remove the seeds for less heat, or leave them in for a spicier version)
  • 1 teaspoon red pepper flakes (optional, for extra heat)
  • 1 teaspoon vanilla extract
  • ÂĽ teaspoon fine salt

Instructions

1. Prepare the Strawberries

Wash the strawberries thoroughly, remove the stems, and cut them into halves or quarters, depending on their size. Set aside.

2. Make the Syrup

In a medium saucepan, combine the sugar, apple cider vinegar, sliced jalapeños, red pepper flakes (if using), and salt.

Bring the mixture to a gentle boil over medium heat, stirring until the sugar has completely dissolved.

Reduce the heat and simmer for about 8–10 minutes, allowing the syrup to become slightly thicker and the peppers to infuse their flavor.

3. Add the Strawberries

Carefully add the strawberries to the syrup.

Cook over low heat for 5–7 minutes, gently stirring occasionally. The strawberries should soften slightly but still hold their shape.

Stir in the vanilla extract during the last minute of cooking.

4. Cool

Remove the saucepan from the heat and allow the mixture to cool for about 15 minutes.

The syrup will continue to thicken as it cools.

5. Store

Transfer the strawberries and syrup to clean glass jars or airtight containers.

Refrigerate for at least 12 hours before serving so the flavors have time to develop.
