- 2 bell peppers (any color), diced
- 2 medium tomatoes, diced

- ½ teaspoon ground black pepper
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- 4 hard-boiled eggs, peeled and halved
- 1 cup (100 g) shredded mozzarella or your favorite melting cheese
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
1. Sauté the Peppers
Heat the olive oil and butter in a large skillet over medium heat.
Add the diced bell peppers and cook for 5–7 minutes, stirring occasionally, until they become tender.
2. Prepare the Tomato Sauce
Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until they soften and begin to break down.
Stir in the tomato paste, salt, black pepper, paprika, and cumin. Mix well.
If the sauce seems too thick, add the water and simmer for another 3–5 minutes until the flavors combine and the sauce becomes rich and smooth.
3. Add the Eggs
Arrange the halved hard-boiled eggs, cut side up, over the tomato and pepper sauce.
Spoon a little of the sauce over the eggs.
4. Add the Cheese
Sprinkle the shredded cheese evenly over the eggs and sauce.
Cover the skillet with a lid and cook over low heat for 3–5 minutes, or until the cheese has completely melted.
5. Garnish and Serve
Remove the skillet from the heat and sprinkle with freshly chopped parsley.
