🍎🥕
Crisp apples, crunchy carrots, sweet dried cranberries, and a creamy, lightly tangy dressing come together in this refreshing salad. It takes just minutes to prepare and is perfect for potlucks, family dinners, picnics, or a holiday spread.
Ingredients
For the Salad
- 3 medium carrots, peeled and shredded
- 2 crisp apples, cored and diced or cut into thin matchsticks
- ½ cup dried cranberries
- ½ cup finely chopped celery
- ¼ cup chopped pecans or walnuts
- 2 tablespoons finely chopped red onion, optional
- 2 tablespoons fresh parsley, chopped, optional
For the Dressing
- ½ cup mayonnaise
- ¼ cup plain Greek yogurt
- 1 tablespoon honey or maple syrup
- 1 tablespoon fresh lemon juice
- 1 teaspoon apple cider vinegar
- ½ teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
1. Prepare the vegetables and fruit
Peel and shred the carrots. Core the apples and cut them into small cubes or thin matchsticks. Chop the celery, nuts, onion, and parsley if using.
2. Make the dressing
In a small bowl, whisk together the mayonnaise, Greek yogurt, honey, lemon juice, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth and creamy.
Taste and adjust the sweetness or acidity if desired.
3. Combine everything
Place the shredded carrots, apples, dried cranberries, celery, nuts, and red onion in a large mixing bowl.
Pour the dressing over the top and gently toss until everything is evenly coated.
4. Chill
Cover and refrigerate for at least 30 minutes before serving. This gives the flavors time to blend while keeping the salad crisp.
Give it another gentle toss just before serving.
Tips for the Best Apple Cranberry Carrot Salad
- Choose crisp apples: Honeycrisp, Gala, Fuji, or Granny Smith all work well.
- Prevent browning: Toss the chopped apples with a little lemon juice before adding them to the salad.
- For extra crunch: Add sunflower seeds, pumpkin seeds, pecans, or walnuts.
- For a lighter salad: Replace some or all of the mayonnaise with Greek yogurt.
- For more sweetness: Add a few extra dried cranberries or a little more honey.
- For extra freshness: Add chopped fresh parsley or mint.
Make-Ahead Instructions
You can prepare the dressing up to 2 days ahead and store it covered in the refrigerator.
For the freshest texture, combine the dressing with the salad shortly before serving. If making the complete salad ahead, refrigerate it in an airtight container and give it a good stir before serving.
