🍲 Easy Chicken & Rice Soup

There’s nothing quite like a warm bowl of homemade chicken and rice soup. It’s simple, cozy, budget-friendly, and made with everyday ingredients. Tender chicken, fluffy rice, vegetables, and a flavorful broth come together in one pot for an easy meal the whole family can enjoy.

🥕 Ingredients

Serves: 6
Prep time: 15 minutes
Cook time: 35–40 minutes
Total time: About 50–55 minutes

  • 1½ pounds boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil or butter
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup long-grain white rice, rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon dried rosemary
  • ½ teaspoon black pepper
  • 1 bay leaf
  • 1 teaspoon salt, or to taste
  • 1–2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley, for serving

👩‍🍳 Instructions

1. Sauté the vegetables

Heat the olive oil or butter in a large soup pot or Dutch oven over medium heat.

Add the onion, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.

Add the minced garlic and cook for another 30–60 seconds, just until fragrant.

2. Add the chicken and broth

Pour in the chicken broth.

Add the chicken, thyme, parsley, rosemary, black pepper, bay leaf, and salt.

Bring the soup to a gentle boil.

3. Simmer the chicken

Reduce the heat to low, cover partially, and simmer for about 15–20 minutes, or until the chicken is cooked through.

Remove the chicken from the pot and place it on a plate or cutting board.

4. Add the rice

Bring the broth back to a gentle simmer and stir in the rinsed rice.

Cook according to the rice variety you’re using, generally 15–20 minutes, until the rice is tender.

Stir occasionally so the rice doesn’t settle on the bottom.

5. Shred the chicken

While the rice cooks, shred or chop the chicken into bite-sized pieces.

Once the rice is tender, return the chicken to the pot.

Simmer for another 2–3 minutes so everything is heated through.

6. Finish the soup

Remove the bay leaf.

Taste the soup and adjust the salt and pepper if necessary.

Stir in the fresh lemon juice and chopped parsley.

The lemon juice isn’t meant to make the soup taste lemony—it simply brightens the broth and balances the richness of the chicken.

🍋 Easy Variations

Creamy Chicken & Rice Soup

For a creamy version, stir in ½ to 1 cup of heavy cream or half-and-half at the very end. Keep the soup over low heat and don’t boil after adding the dairy.

Add More Vegetables

You can easily add:

  • Frozen peas
  • Corn
  • Green beans
  • Mushrooms
  • Spinach
  • Diced potatoes

Use Brown Rice

Brown rice works beautifully, but it takes longer to cook. Add it earlier and follow the cooking time on the package.

Add a Little Heat

For a spicy version, add:

  • ¼ teaspoon red pepper flakes
  • A pinch of cayenne
  • Fresh jalapeño
  • A few dashes of hot sauce

🥄 Recipe Tips

Chicken thighs are especially flavorful. They stay tender and add plenty of flavor to the broth.

Rinse the rice first. This removes excess surface starch and can help keep the soup from becoming unnecessarily cloudy or thick.

Don’t overcook the rice. Rice continues absorbing broth as the soup sits, so leftovers will naturally become thicker.

Want a brothier soup? Add another 1–2 cups of chicken broth when reheating leftovers.

For meal prep: Consider cooking the rice separately and adding it to individual bowls. This keeps the rice from soaking up all the broth while the soup sits in the refrigerator.

🧊 Storage

Cool leftovers promptly and refrigerate them in a covered container.

The soup can generally be refrigerated for 3–4 days.

For longer storage, freeze the soup in individual portions. If possible, freezing the broth and chicken separately from the rice gives you the best texture when reheating.

When reheating, add a splash of chicken broth or water if the soup has thickened.

🍲 What to Serve With Chicken & Rice Soup

This soup is satisfying on its own, but it’s wonderful with:

  • Crusty French bread
  • Garlic bread
  • Homemade biscuits
  • Dinner rolls
  • Grilled cheese
  • A simple green salad
  • Crackers

⭐ The Best Part?

This is one of those recipes where you don’t need anything fancy.
