  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 8 cups chicken or turkey broth
  • 2 cups water, plus more as needed
  • 2 bay leaves
  • 1½ teaspoons Cajun seasoning, plus more to taste
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce, optional
  • 1 tablespoon olive oil
  • Salt, to taste
  • 2 cups chopped cooked collard greens

Instructions

1. Prepare the Beans

Sort through the beans and remove any stones or damaged beans. Rinse thoroughly.

For the best texture, soak the beans according to the package directions, then drain and rinse them before cooking.

2. Sauté the Vegetables

Heat the olive oil in a large heavy-bottomed pot over medium heat.

Add the onion, bell pepper, and celery. Cook for about 5–7 minutes, until the vegetables begin to soften.

Add the garlic and cook for another 30–60 seconds.

3. Build the Soup

Add the drained beans, smoked turkey necks, diced tomatoes, broth, water, bay leaves, Cajun seasoning, smoked paprika, thyme, black pepper, and cayenne if using.

Stir everything together.

4. Simmer

Bring the soup to a boil, then reduce the heat to low.

Cover partially and simmer for about 1½–2½ hours, or until the beans are tender and the turkey meat is falling easily from the bones.

5. Add the Collard Greens

When the beans are nearly tender, stir in the chopped collard greens.

Continue simmering for about 20–30 minutes, until the greens are tender.

6. Finish the Turkey

Remove the turkey necks from the pot and allow them to cool enough to handle.

Pull the meat from the bones, discard the bones and any unwanted skin or cartilage, and return the turkey meat to the soup.

Stir in the Worcestershire sauce and hot sauce, if using.

Taste and adjust the Cajun seasoning and salt.
